Chicken Tostadas


It's getting pretty ridiculous in the heat department, isn't it?  It is here in Louisville, anyway.   It's sitting at a nice 97F right now.  And yes, I do still have to play volleyball in this crap tonight.

So when it's hot like this, firing up the stove or the oven is the last thing I want to do.  This is when I have to start getting creative for dinner.  And we all know how fun it is to get creative with leftovers, right?  So if you just roasted a chicken the day before - or possibly made Jonathan Waxman's Chicken Al Forno (which is AMAZING, by the way) the night before for dinner (which, if you haven't gotten the hint - I did) - then you can have dinner the next day ready in no time.  Well, that is if you planned to have leftovers of the al forno!


Ingredients:



Leftover chicken, shredded
Salsa verde, homemade or store-bought
15 oz can seasoned black beans, drained
1 large tomato, chopped
Shredded cheddar cheese (I had a chipotle blend that was THE bomb!)
6 corn tortillas

Now, I know I promised I wouldn't turn on the oven for this one - but it's really only to crisp up your corn tortillas.

Preheat oven to 375 F.

Place corn tortillas directly onto the center oven rack (or if you wanted to dirty up a baking sheet - be my guest).  Bake for about 3-5 minutes, or until tortillas are crisp and golden.

Heat your shredded chicken in the microwave (if you want - I left mine cold because we're trying to cool down remember?).

Place 3 tortillas on a plate.  Top with desired amount of black beans, shredded cheese, chicken, tomatoes, and salsa verde.


Easy as pie right?  And totally hits the spot, too!  You could definitely do this with any leftover protein and veggie combo.  I just used what I had on hand and had dinner ready in no time!

Spicy Fried Rice w/ Chorizo


Happy Friday guys!  I am so elated that it's rearing up to be the weekend, that it's not even funny.  We've got a pretty jam-packed weekend planned, actually.

Tomorrow morning is the Derby Marathon & Mini.  And no.  My butt is not running in it.  I'm not that in shape yet.  I'll actually be volunteering at one of the Powerade and water stations (mile marker 10/19 for those of you that are actually running!).  The only bad thing about this is... I have to be there at 6:15am.  SIX. FIFTEEN. In the morning.  On a Saturday.  Yeah.  I'm dedicated to giving the runners their fluids.


But it won't be so bad.  I've been on a volunteering kick lately, so it'll be good to get out there and do some good.  (And I get a free t-shirt, so that's always a plus!)

And there's also a free concert (that was supposed to be by the river, but considering Waterfront Park looks pretty much like Atlantis right now, I'm positive that they'll be relocating that) on Saturday night that we plan on going to with a couple friends.  The band?  Soul Asylum.  Yeah, anybody remember that early 90's band?  Most famous for that song "Runaway Train".  Yeah, I was 7 when that came out, so no, I don't really remember that band... but since Andy is a tad bit older than I am, he remembers them clearly.  Which is also funny because he can't ever remember to take out the trash on Mondays, but yet, remembers a band from ages ago.  But I digress. 


Anyway, let's talk fried rice.  Fried rice is one of those things that I believe my mom can make the best.  She always just added in whatever we had laying around the house, and it was always amazing.  Definitely great for dinner all on it's own.  But I'm not bragging.

What I will be bragging about, is this new recipe for fried rice that may give my mom's many versions a run for her money.  It's spicy, it's filling, it's absolutely delicious.  So go ahead, try it out - you won't be disappointed!

Ingredients:
Adapted from PigPigCorner's recipe


2-3 cups leftover cooked rice (cold and day old is usually best)
1 tablespoon unsalted butter, melted
4 pieces of bacon, chopped
1 small onion, diced
3 cloves of garlic, minced
2 scallions (green parts only), chopped
1 large cooked chorizo sausage (or whatever meat/protein you want to add - I just had some leftover), chopped
2 tablespoons Sriracha, or other hot sauce
1 tablespoon sugar
1 tablespoon hot water
1 tablespoon sesame oil
Soy sauce, to taste
3 eggs

In a medium bowl, mix leftover rice with the melted butter and set aside.

In a small bowl, mix together Sriracha, sugar, and hot water.  Set aside.

In a large skillet under medium high heat, fry up the bacon pieces until browned and crisp, about 6-8 minutes.  Remove with a slotted spoon and transfer to a paper towel-lined plate.  Set aside.

Drain pan of the bacon fat, leaving about 1-2 tablespoons still in the pan.  Add the diced onions and cook until softened, about 5 minutes.

Stir in garlic and half of the scallions.  Saute for about a minute more.

Add rice to the pan and pour Sriracha mixture over top.  Mix well.  Stir fry for about 3-5 minutes, or until rice is started to "crisp" or brown.

Crack the eggs over the rice and stir to scramble throughout mixture.  Cook for an additional 2-3 minutes, stirring often.

Stir in bacon pieces and chorizo.

Season mixture with soy sauce, I think I used maybe 2-3 tablespoons and it was perfect. 

Stir in sesame oil and remaining scallions.  Serve hot and with extra Sriracha if you'd like!


This was seriously delicious.  We had this with some Red Curry Chicken Wings (recipe soon to come!) and it couldn't have been a better meal.  The best part?  We had a good amount of leftovers, and after making this on Tuesday, they're practically almost gone.  It's almost bittersweet... but then again, I could always just make some more!

Barbecue Carnita Tacos

Happy Friday guys!  I just got back from a grueling spinning class (high resistance for 90% of the class = major leg workout!).  I've been really digging it, though, and going at least 2-3 times a week.  I think it just might be the workout I can live with.  For now, anyway.


I've got the day off today and tomorrow from work (unfortunately I've got to work Easter.  Retail is a bummer.)  So I'm making use of my days off and keeping busy.  I'm cleaning out our bathroom (for one of the smaller rooms in a house, it's a lot of work!) and heading to a movie tonight with my book club girls.  Anybody read Water for Elephants?   It was our first book club book and since the movie comes out tonight, we're all heading out to see it.  Should be fun, and plus, it'll give me something to do because Andy has class until 10 tonight.


So I suppose you guys came here for some food right?  Right.


One of my favorite things to do with leftovers is turn them into tacos!  I mean seriously... it's perfect.  You have your protein already made.  You just have to chop up some vegetables.  Warm up some tortillas.  And bam!  You've got dinner made in less than 30 minutes!

Remember Wednesday's barbecue?  Well, I had a ton of brisket leftover!  So it was obvious what I would be doing with it.  Tacos!  After perusing The Food Addicts' site, I thought I'd follow suit and jazz them up by turning them into a 'healthy' carnita form (no frying here!).

And don't forget to vote in the poll for this week!  I need to make something this weekend, and more than likely it's going to Easter-related!


Ingredients:



2-3 cups leftover pulled barbecue (like this recipe here)
Fresh sweet corn (or frozen), cut from the cob - you can cook it first if you like, but I actually like raw corn
1 large tomato, seeded and diced
1 cup shredded cheddar cheese
6 soft flour tortillas, warmed
1 cup romaine lettuce, chopped
Salsa and sour cream, optional

Preheat your oven broiler to the "High" setting and place the oven rack towards the top of your oven (if your broiler is in your oven instead of below it.

Line a baking sheet with aluminum foil and spread you meat in an even layer.  Broil meat in oven until slightly browned and crisp, about 8 to 10 minutes.  Make sure to flip the meat over to get an even broil on both sides.  Alternatively you could always do the "frying" route to make your carnitas, but we're trying to be somewhat healthy around here so we didn't opt for that.

Once meat is at your desired crispness, assemble your toppings with your desired toppings (we did some fresh tomatoes, cheddar cheese, corn, and lettuce.  Simple and delicious!


See.  Dinner ready in no time flat.  Using leftovers!  So next time you open your fridge and see those leftovers, don't pass them by.  Turn them into tacos and you'll have a delicious meal in minutes!

Restaurant Recreations: Fiesta Time Mexican Grill

Happy Monday guys!  Hope everyone had a great weekend.  I know we did!  It was Andy's first official weekend off and he says it felt great!  He's already been told after his 1st week at the new job that he's doing a great job, so he's in high spirits!  I'm still so proud of my little grown up! =)

Anyway, it's been a while since I've done a review so I thought I'd take a crack at it.

On the outside, Fiesta Time in Oldham County looks likes any old Mexican restaurant.  Beer and tequila neon signs filling the windows,  sombreros a-plenty, and margaritas in every corner.  As traditional as it gets, right?  Well, that's what I thought going in anyway.

We walked in at a decent hour, maybe 8:30ish.  The servers seemed to "rush" us a little bit.  The sign on the door said they close at 11pm so I didn't understand why that was happening.  But we continued on, blindly.

We ordered the typical Mexican fare, Andy getting some fajita quesadilla of some sort and I opted for the Combo #2 (a taco, an enchilada, and a chalupa).  We also ordered some nachos for an appetizer and it was just a little lack-luster to even get into.

So what about our food?  I think we were so famished we ate it with no complaints.  But looking back, I have a few key points:

- Not all Mexican restaurants are the same - and Fiesta Time proves it... and not in a good way
- I could have made this at home.
- I did make this at home... and it was 100x more delicious.

Honestly, I wasn't impressed.  Andy's fajita quesadilla was unimpressive (although he seems to disagree and said it was pretty good, but maybe I'm just a snob), and my combo, was well... let's just say I've had better things at Taco Bell (I know, I know - that was harsh).

So, first thing I set out to do?  Recreate this sucker!  So let's see how it went...




Ingredients:


Tacos:

1 tablespoon olive oil
1 onion, minced
3 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
salt and pepper, to taste
1 lb. shredded chicken & beef (I had leftover grilled meats from this meal)
1/2 cup tomato sauce
1/2 cup chicken broth
2 teaspoon apple cider vinegar
1 teaspoon dark brown sugar
soft tortillas, warmed

Enchiladas:

1 cup salsa verde
1/2 cup cheddar cheese, shredded
1/2 cup pepperjack cheese, shredded
5-6 soft tortillas

Chalupas:

1 cup masa harina flour
1/2 cup water
vegetable oil, for frying
Filling from tacos, above
sour cream, optional

For the taco filling, heat a large skillet under medium high heat and add olive oil.  Saute onion until soft and translucent, about 5 minutes or so.  Add in garlic, chili powder, cumin, coriander, oregano, cayenne, salt, and pepper.  Stir until fragrant, about a minute.

Stir in the shredded chicken and beef (you could definitely just use a pound of ground beef if you wanted, but I had all those leftovers, I couldn't let them go to waste).  Heat until warmed, about 4-5 minutes.

Add in tomato sauce, chicken broth, apple cider vinegar, and brown sugar.  Stir until sugar is dissolved.  Season with salt and pepper, to taste.  Use to fill soft taco shells and top chalupa (recipe below).

For enchiladas, preheat oven to 350F.  Heat a small to medium-sized skillet (large enough to fit soft tortilla in) under high heat and add a thin later of vegetable oil, just enough to coat the pan.

Heat tortillas in oil, one at a time, for about 10-15 seconds, just on one side.  Transfer tortillas to a paper towel-lined plate.  This ensures the tortillas are easier to work with and fold tightly.

Grease a small (maybe 8 x 10) casserole dish.  One by one, place a good amount of both cheese in the center of each tortilla.  Roll up and place snuggly in casserole dish.  Top with salsa verde and any remaining cheeses.

Bake in oven for about 10 to 15 minutes, or until cheese is melted and starting to brown on top.  Broil for 1-2 minutes to crisp up even more, if desired.


To make chalupas, combine water and masa harina until dough forms.  Form dough into 4 patties, about 1/4 to 1/2 inch thick.

Heat about 1 inch of vegetable oil in a heavy bottomed pan under medium high to high heat.  You'll know when the oil is ready when a piece of dough sizzles when you place it in there.

Fry each chalupa for about 3-5 minutes (or until golden on both sides) and transfer to a paper towel-lined plate to dry.  Top chalupas with filling from above and sour cream.

No lettuce or tomatoes in the house = a not so colorful picture, but hey... it tasted pretty darn good!

So yeah, needless to say, this produces a lot of food.  So make sure you have company.  Or a large family.  Or a big appetite.

My verdict?  I think my "unauthentic" Mexican Combo #2 far-outweighed Fiesta Time's "authentic" Mexican Combo #2.  From now on, I'll stick to my around-town favorites like El Mundo, El Caporal, or El Torasco.  Do we see a trend here?  I don't know, but my hypothesis is that if it doesn't start with "El", it may not be all that. =)
