Blueberry & Avocado Spinach Salad


Happy Monday guys!  Anybody do anything exciting?

Again, we were pretty lazy.  Andy had to go into work yesterday night for some end of the month reports, so I sat around the house catching up on some Netflix action.

It's also August!  Boy has this year flown by!

I thought I'd start the week with something light.  I usually take my lunch to work 99.9% of the time, and this is just a glimpse of the sort of thing I take with me!

Ingredients:



1 Avocado, cubed
1/4 cup cherry or grape tomatoes
a few slices of ham, chopped
1/4 cup blueberries
1 cup spinach
juice from 1 lime

I'm one of those weird people that prefers their salad undressed most of the time.  And plus, the avocado is creamy enough that it adds a faux dressing feel.

Combine avocado, tomatoes, ham, blueberries, and spinach in a large bowl.  Toss until mixed well. 

Squeeze lime juice over salad and toss again. 

Dig in!

Well, I'm off to get some cleaning done around the house - since I let myself be lazy all day yesterday!  Have a great start to the week guys!

  5. After eating not so healthy for a couple days I begin to crave salads. This is one I'd love to try. Perfect for summer and to pack for lunch for work. Yummy!

  6. can i suggest a few toasted almonds?? We eat this very salad (plus home made dressing) at least 3X a week. Only with almonds - hello calcium and protein! they play very well with avocado. Oh, and we also sub a few slices of raw onion in exchange for the ham. So okay, we don't make this VERY salad - but we like spinach salad just like you! Small world. haha...

  8. Sounds like a really tasty and wonderful flavored salad, beautiful to look at.

    I had a wonderful homemade Dinner with MOM and also found a new awesome Mexican Joint with wonderful food so I was happy.

  20. I almost always bring lunch to work and I try to keep it light and healthy. A salad like yours, rice with vegetables or legumes. We had a really nice week end in the mountains.

    Salads are one of those that I will crave to the max, like the beautiful green striking contrast of colors with the rest added inside.

    I take my lunch to work most of the time. Whatever is leftover so I try to cook more than we can eat at nights:)

  28. I always bring my lunch to work. I usually bring soup and heat it up in the microwave. That and lots and lots of fruit.
