Garden Update & My New Favorite Sandwich



The garden is really freakin' green right now!  It's definitely in better shape than last year's garden!  We've got tons of lettuce, that's for sure!  The onions are doing pretty well too, well, besides the fact that I planted the pumpkins right next to them.  Maybe next year, the pumpkins will have their own patch of land - I'm still learning =)


The herbs are growing nicely too - parlsey and cilantro are practically a-plenty... anybody need some?  Hehe.


And my tomatoes!  They're flowering, which is exciting - because they didn't even get to this stage last year.  Looks like I'll be buying plants from now on, as opposed to seeds like I did last year!


Anyway, with all the lettuce we've been having, in our CSA and in the garden - salads seem to be a go-to lunch.  But when we tire of salads, I like to make a nice little sandwich!  And this just happens to be my fave at the moment:

Ingredients:



2 slices of bread, toasted
lettuce
hummus 
smoked gouda slices
cajun turkey

Assemble all ingredients into a sandwich and enjoy!


Hummus is seriously my favorite sandwich condiment... especially since I HATE putting mayo on sandwiches =)

  1. Wow... your garden is just going gangbusters! It was really cold and damp until a couple of weeks ago, so our garden is off to a slow start... I did just spot a couple of blossoms on one of my Early Girl tomato plants, so I've got high hopes that my garden will catch up with yours soon enough! :)
    My current favourite condiment is the chipotle-onion jam I whipped up for burgers the other week. I could eat that stuff by the spoonful. Hummus rates pretty high on the list, though.

  9. Your garden looks amazing!! I love it, and am so jealous! My mother has a crazy garden with kale, tomatoes, pumpkin, etc! If only I get inherit her green thumb =)
    I usually put deli mustard on my sandwiches, but I will try it with hummus, next time. =]

  12. Lucky you...I had three tomato plants in the back yard, and some groundhogs ate them. :-( I need to make a fence, but I don't think I'll have time to replant this year. I do have some herbs on the front porch, though, so I'll have to settle for those and the CSA.

  13. Peggy, you have such a beautiful garden! Your sandwich with smoked gouda looks delicious - that's my favorite cheese! We sometimes wish we don't live next to the canyon, then we could have a nice veggie garden. I hate going to supermarket to "buy" herbs and they go bad soon.

  14. There's a hummus amongus: I love a thick schmear of the stuff on a sandwich, too. Sometimes it's almost all you need, with a slice of tomato or some sliced bell peppers. Easy, fresh and clean.

    I actually have a post in my blog queue about my very favorite sandwich, ready to go live on Friday: crusty bread, sliced hard-boiled egg, beets, lettuce, onion, tomato, spicy mustard. Sometimes I put a little sauerkraut on there, too—it's messy, it smells funny, it's delicious.

    Your garden looks fantastic! Have you read Novella Carpenter's "Farm City?" I'm almost through with it and am finding it so charming -- you might like it!
